Lamb Chops are a wonderful change and make a great celebration or holiday meal. They’re a bit pricey, but you can’t go wrong with this recipe, which will give you perfectly seasoned, delicious chops every time.
This recipe requires no modification for the FODMAP or histamine diets. Just keep in mind the more you cook and char meat, the higher the histamine content. You also want to free any leftovers immediately after they’ve cooled, to stop histamine growth.
Herb Roasted Lamb Chops
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 teaspoon coarse kosher salt
- 3 tablespoons olive oil, divided
- 4-6 1 1/4-inch-thick lamb loin chops
Mix first 4 ingredients and 1 tablespoon olive oil in large bowl. Add lamb; turn to coat. Let marinate at room temperature at least 30 minutes and up to 1 hour.
Preheat oven to 400°F. Heat remaining 1 tablespoon olive oil in large ovenproof skillet over medium-high heat. Add lamb; cook until browned, about 3 minutes per side. Transfer skillet to oven and roast lamb chops to desired doneness, about 7 minutes for medium-rare.
