Pork Tenderloin with Oven Roasted Zucchini and a Baked Potato

Oven Roasted Zucchini

fodmapiconhistamineiconOven roasting fresh zucchini really helps to enhance the flavor and gives it a bit of a smoky flavor enhancement. The spices used in this recipe turn zucchini into something a bit different with the crunchy broiled parmesan on top providing some excitement, it feels positively decadent. All without adding too many carbs for most FODMAPers. If you have mold sensitivities, you will want to skip the cheese, but it’s still got amazing, satisfying flavor nonetheless.

Oven Roasted Zucchini

  • 2 zucchini
  • 1 tsp olive oil
  • Sage
  • Thyme
  • Salt
  • 2-3 tablespoons Shredded parmesan*

Set oven to broil. Cut ends from zucchini and cut in half, lengthwise. Brush with olive oil and lay cut side up in tray. Sprinkle with spices. Broil 3-5 minutes. Top with parmesan. Broil an additional 2-3 minutes, until cheese starts to brown and crisp. Serve warm.

*parmesan is optional and only suitable for FODMAPS and if no mycotoxin intolerance or allergy is present with a mast cell disorder.
