Pork Tenderloin with Oven Roasted Zucchini and a Baked Potato

Oven Roasted Zucchini

Oven roasting fresh zucchini really helps to enhance the flavor and gives it a bit of a smoky flavor enhancement. The spices used in this recipe turn zucchini into something a bit different with the crunchy broiled parmesan on top providing some excitement, it feels positively decadent. All without adding too many carbs for most FODMAPers. If you have mold sensitivities, you will want to skip the cheese, but it’s still got amazing, satisfying flavor nonetheless.
